Prof. Jatindra K. Sahu is a Professor at the Centre for Rural Development and Technology, IIT Delhi, and a leading innovator in food process engineering. He leads the Food, Nutrition, and Health Research Group, with research spanning food fortification, 3D food printing, functional foods, bioactive encapsulation, and postharvest management. Trained at IIT Kharagpur, he has held fellowships from the University of Queensland, University of Reading, and Virginia Tech. With over 100 publications, 5 books, 15 book chapters, and extensive PhD mentorship, his work has significantly contributed to food science and technology.
